Gluten Free

Dominos has gluten free pizza now. Ive tried it twice, and have been happy both times. Sometimes when you are gf, you want something "normal" so badly and have no where to turn. It was nice, especially today with the blazing hot heat, and me being sick :( I enjoyed my pizza, and went straight to sleep for a 2.5 hr nap! phew!




Gluten Free Gnocci

Ingredients:
2 lb cooked mashed potatoes
1 cup white rice flour
3/4 cup potato starch
1/4 cup corn starch
1 tablespoon margarine (I used butter)
1 tablespoon grated parmesan (optional)
2 eggs
salt
*I added 2 teaspoons xantham gum


Directions:
Mix all ingredients with hands. Knead lightly. Shape small portions of the dough into long snakes. On a floured surface, cut snakes into small pieces. (I use a fork to make impressions in to the gnocci so the sauce sticks better) **You can freeze them on a cookie sheet, then transfer them to a freezer bag if you don't plan on cooking them all**
Place a few gnocci in salted boiling water. As the gnocci rise to the top of the pot, remove them with a slotted spoon. Repeat until all are cooked. Cover with hot tomato sauce and serve. You can re-heat them in the microwave.
